These Crispy Fried Chicken Wings are coated in fine saltine crackers and spices then deep fried to a crispy crunchy golden brown. This small batch recipe serves two and makes a great game day appetizer, lunch or dinner with your honey or best friend.

Ingredients
- 1 egg
- 1/2 cup milk
- 1/2 Tablespoon vinegar
- 1 lb chicken wing portions (wingettes and drumetts)
- 3/4 cup all-purpose flour
- 1/4 cup saltine crackers (crushed fine)
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground dried thyme
- 1/8 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 1/8 teaspoon garlic powder
- Oil for frying (fill electric skillet about 1 inch deep)
- 2 Tablespoons bacon grease (optional)
- Salt to taste
Instructions
- Beat the egg, milk, and vinegar together in a mixing bowl until smooth. Mix in the chicken wing portions, cover, and refrigerate 30 minutes.
- Combine the flour and crushed crackers with the pepper, thyme, cayenne pepper, salt, and garlic powder in a large mixing bowl.
- Heat oil and bacon grease (if using) in an electric skillet or large saucepan to 350 degrees F (180 degrees C). Click here for a 16 inch electric skillet.
- Remove the chicken wing portions from the buttermilk marinade, and discard the remaining marinade. Allow the excess buttermilk to drip from the wings, then press into the cracker crumbs to coat.
- Cook in the preheated skillet until the breading is golden brown on the outside, and the chicken wings are no longer pink at the bone, about 12 minutes. Turn them over half way through frying.
- Drain on a paper towel-lined plate, and season to taste with salt.
