A grilled cheese sandwich stuffed with bacon, avocado, egg, and cheese. It's so big and messy (in a good way) you'll need both hands to hold it.

Ingredients
- 4 large eggs
- 4 slices bread I prefer Texas toast
- 4 slices cheese I used Colby Pepper Jack and Mozzarella
- 4 slices bacon cooked crisp
- 1 medium avocado sliced
- 2 tablespoons butter more if needed
- salt and pepper to your taste
Instructions
- In a frying pan, melt a little butter over low heat.
- Add the eggs and fry eggs so the yolks are cooked how you like them. Add salt and pepper to taste. Once done, remove from the pan.
- Butter one side of each piece of bread. In a separate frying pan on medium-LOW heat, add a slice of bread, buttered side down. (This sandwich has so much going on I did one at a time.)
- Add a slice of cheese.
- Top with two fried eggs, bacon, and avocado slices.
- Top avocado with a slice of cheese.
- Top with another piece of bread, buttered side up.
- Cook until cheese is melted and bread is golden brown on both sides.
